INGREDIENTS

  • ½ cup pumpkin puree
  • 2 whole eggs
  • 2tbsp melted coconut oil
  • ¾ cup all-purpose flour
  • ½ cup Vanilla BuiltByStrength Whey Protein
  • ¼ cup granulated sugar substitute
  • 1½ tsp pumpkin pie spice
  • ¼ tsp baking soda
  • 1 tsp baking powder

Extra for topping

  • 1½ tbsp sugar substitute
  • ¾ tsp ground cinnamon

Directions:

  1. In a medium sized bowl add all wet ingredients and mix well.
  2. In a separate medium sized bowl add dry ingredients except cinnamon and sugar substitute and mix well
  3. Pour wet into dry and combine until batter forms
  4. Coat a doughnut tray with non-stick baking spray
  5. Add an equal amount of batter to each donut mold
  6. Bake at 325 8-10 minutes
  7. While doughnuts are baking get together cinnamon sugar topping
  8. In a plastic bag add ¾ tsp cinnamon & 1½ Tbsp (18g) of sugar substitute
  9. Shake the bag until combined
  10. When doughnuts are done baking lightly spray them with cooking spray and coat them in the cinnamon sugar mixture
  11. Serve warm
