Sweet Potato Skillet Breakfast

Breakfast is one of those meals that can, well, how do we put this lightly – be boring.  We eat the same thing each morning because it’s easy or we just skip it, thinking it’s too hard or time consuming to fit into our busy schedules.  If easy is the name of the game, than we’ve got the perfect all-in-one breakfast skillet recipe from our friend George Bryant of Civilized Caveman Cooking that will be both convenient and delicious.


  • 1/2 pound grass fed ground beef or 2 Italian sausages, casing removed
  • 2 cups shredded sweet potato
  • 2 cups spinach
  • 3 eggs
  • 4 tablespoons coconut oil
  • 1/2 medium onion, diced (1/2 cup)
  • 1/2 green pepper, diced (1/2 cup)
  • 2 cloves garlic, minced
  • goat cheese to garnish
  • avocado to garnish

This breakfast skillet is loaded with healthy fats like avocado and coconut oil that will not only keep you satiated, but also leave you feeling energized and ready to power through the day.  You’ll also get high levels of multiple antioxidants (i.e. lutein, polyphenols, proanthocyanidins, tocopherols and carotenoids) and nutrients including vitamin K, vitamin A, vitamin B6, folate, potassium, manganese, magnesium and fiber.

Sweet potatoes have lower caloric and carbohydrate content than regular potatoes or rice, making them a great source of energy for anyone hitting the gym or box hard. They are also lower on the Glycemic Index, which means they help to sustain energy levels longer, as they are slower to digest, making them a great choice for a pre-workout meal to help push through a hard session.

Garlic is another ingredient in this recipe that has many great health benefits. In addition to improving the immune system and helping combat heart disease, cancer, high blood pressure and high cholesterol, garlic has been proven to enhance protein synthesis, which in turn can help to increase muscle mass and boost gains.

Eggs really are the perfect super food. They contain almost every nutrient your body needs and are high in quality protein, the main building block of the human body. Getting adequate amounts of protein can increase muscle mass, lower blood pressure, optimize bone health and aid in weight loss.
