Recipe: Quinoa with Spinach and Feta

Quinoa Recipe

Looking for a great meal but don’t have a lot of time to prepare? This Quinoa with Spinach and Feta Recipe has everything you need to power through your day and is so easy to make!

Ingredients:

2 tsp olive oil
1 cup onion, diced
¼ cup celery, diced
1 tsp garlic, minced
1 cup quinoa
2 cups low sodium chicken broth
2 cups spinach, chopped
½ cup mushrooms, chopped
¼ cup feta cheese
½ tsp salt
¼ tsp pepper

Directions:

  1. In a saucepan heat oil over medium heat; add onion and celery and cook for 5 minutes
  2. Add the garlic and quinoa and cook for another minute; add broth and bring to a boil
  3. Reduce the heat to low and simmer for 12 minutes; stir in mushrooms and spinach and cook for 2 minutes longer or until the quinoa is cooked
  4. Add the feta at the end and season with salt and pepper; serve hot
